On a humid Thursday the 18:00 shot ran fast no matter the grind. We lowered dose slightly, tightened tamp, and tasted every twenty minutes until the room quieted. A guest asked if we could "guarantee" the same tomorrow — we said no, but we would dial again in the morning. That is the job.
